The granola is packed full of arthritis-friendly ingredients and lower in sugar than many shop-bought breakfasts, and is a great start to the day. Rapeseed oil and nuts provide a good balance of omega 3 and omega 6 fatty acids. Turmeric and ginger have both been shown to be anti-inflammatory in lab studies – although you’d potentially have to eat a lot of this granola to get much of an effect in the real world!
Turmeric can vary in strength so start with 1/2tsp and taste the mixture if you are at all uncertain about the flavour.
Baking at a lower temperature means you don’t need to pull it in and out of the oven to stir it as frequently – which always helps with sore joints. We like to eat this sprinkled on yoghurt or by the handful as a snack.
It will keep for up to 6 weeks in an air tight container stored in a cool, dry place.
Ingredients (8 servings):
250g oats
50ml rapeseed oil
70ml maple syrup
50g nuts (any that you like – I used cashews and pistachios)
1tsp cinnamon
1tsp ginger
1tsp turmeric
1tsp vanilla extract
30g dried cranberries
30g dried apricots
Recipe: Preheat your oven to 150C. In a mixing bowl, combine the oats, spices, vanilla extract, nuts, maple syrup and oil. Give everything a good stir to combine. Spread the mixture out in an even layer on a baking tray. Bake for 30 minutes, stirring once halfway through. Take out of the oven and allow to cool for a few minutes before sprinkling over the dried cranberries and apricots. Enjoy!
