A delicious, arthritis-friendly recipe for teriyaki salmon, full of omega 3 and antioxidants. These little tin foil parcels cook fish and vegetables together in the oven, giving you a speedy meal, with virtually no washing up! Ingredients:
2 salmon fillets
1 tablespoon mirin
1 tablespoon soy sauce
1 tsp fresh grated ginger [grated with a microplane grater]
2 spring onions [snipped with scissors]
200g mix of broccoli, asparagus, mange tout etc
Recipe: Preheat oven to 180C. In a small bowl mix together the mirin, soy sauce and grated ginger. Take two A3 sized pieces of foil and put a salmon fillet in the centre of each. Fold up the edges of the foil sheets to create a little dish to contain the salmon. Next, divide the vegetables between the two foil sheets and then drizzle the marinade over the salmon fillets. Top with a sprinkle of sliced spring onions.
Carefully fold the sides of the foil up and roll under at the top – as if you were making two foil pasties!
Bake in the oven for 15-20 minutes, or until the salmon is cooked through (this will depend on the thickness of your pieces). Serve with rice.
