Turkey and Lentil Stir Fry SERVES: 4 Ingredients: 200 grams turkey mince 30 grams boiled lentils’ ( you can buy ready from the supermarkets) or simple use dry lentils and boil for 15/20 min and drain 1 red onion chopped 1 clove of garlic minced 2 handfuls of washed roughly chopped spinach 1 tablespoon coconut oil a pinch of dried oregano salt/pepper and some olive oil to drizzle at the end This is a perfect gluten free and protein packed quick recipe. You can have the stir fry stuffed into a whole meal pitta bread with some hummus or yogurt and some veggies such as cucumber or have it with a sweet potato ( cooked the same way as a jacket potato) or with a salad. Method: Melt the coconut oil in a pan and add the chopped onion and garlic – fry for 2/3 minutes and then add the mince, but try and break it up into small pieces – cook for 4/5 minutes, add the spinach and boiled lentils and salt/pepper and dried oregano – cook for another 2/3 minutes and stop the heat and drizzle some olive oil.
